- 3 eggs
- 1 1/4 cups all-purpose flour (5.3 oz / 150g)
- 1/2 cup sugar (3.5 oz / 100g)
- 1 teaspoon baking powder (0.2 oz / 5g)
- 2 medium apples
- Zest and juice of 1 lemon
- A pinch of salt
- Butter, for greasing the pan
- Parchment paper (optional)

- 2 tablespoons extra all-purpose flour, for a firmer texture

Directions:
First, crack the eggs and separate the whites from the yolks. In a clean bowl, beat the egg whites with a pinch of salt until they form stiff peaks, but be careful not to overbeat.
Then, in another bowl, whisk the yolks together with the sugar until the mixture becomes pale, thick, and fluffy.
Next, add the lemon juice and zest. If you like, you can also add a few drops of vanilla extract or a pinch of cinnamon for extra flavor.
After that, mix in the baking powder and flour until everything is well combined.
Soon after, gently fold in the beaten egg whites using a spatula, making slow, upward movements to preserve the batter’s volume.
Then, peel and slice the apples thinly or cut them into small cubes. Carefully mix them into the batter so the pieces don’t break apart.
Afterward, grease and flour a medium-sized glass baking dish, or line it with parchment paper. Pour the batter evenly into the dish.
Finally, place it in a preheated oven at 356 °F (180 °C) and bake for about 40 minutes, or until the top is golden and the cake is firm to the touch.
