How to make Homemade Lemon Cake

Ingredients:
- 1 container plain yogurt (200g / 7 oz)
- Juice of 1 lime
- 3 eggs
- 70ml vegetable oil (2.4 fl oz / just under ⅓ cup)
- 1½ cups sugar (300g / 10.6 oz)
- 2½ cups all-purpose flour/wheat flour (300g / 10.6 oz)
- 1 tablespoon lime zest
- 1 tablespoon baking powder (12g / 0.42 oz)
Lime Cream Topping:
- 1 can sweetened condensed milk (395g / 14 oz)
- Juice of 3 small limes
Directions:
Start by adding all the liquid ingredients to a blender: the yogurt, lime juice, eggs, and oil. Blend for about 2 minutes until well combined.
In a separate bowl, sift together the flour and sugar. Pour the blended mixture into the bowl with the dry ingredients. Stir well until the batter is smooth and uniform. Add the lime zest and baking powder and mix gently to combine.
Pour the batter into a greased and floured baking pan. Bake in a preheated oven at 350°F (180°C) for about 40 minutes, or until a toothpick inserted into the center comes out clean.
For the Cream:
In a bowl, combine the condensed milk and lime juice. Stir well until it thickens into a creamy consistency.
Once the cake has finished baking and is completely cool, spread the lime cream on top. Garnish with extra lime zest if desired.
Serve as a snack or for breakfast.
