How to make Lemon Pie

Ingredients
For the Base:
- 1 package of ladyfinger cookies (whole)
For the Filling:
- 1 can of heavy cream
- Juice of 4 lemons
- 1 can of sweetened condensed milk
For the Meringue:
- 3 tablespoons of sugar
- 3 egg whites
- 1 teaspoon of vanilla extract
Directions :
Assemble the Base:
First, line the bottom of a springform pan with whole ladyfinger cookies. If necessary, break some cookies to fill all the gaps.
Prepare the Filling:
Then, in a bowl, mix the heavy cream, sweetened condensed milk, and the juice of 4 lemons until you get a smooth and homogeneous cream. Next, pour this mixture over the cookie base in the pan, spreading it evenly.
Prepare the Meringue:
After that, using a mixer, beat the egg whites until they form stiff peaks. Gradually add the sugar while continuing to beat until stiff peaks form. Then, add the vanilla extract and mix gently. Spread the meringue over the lemon filling, creating decorative peaks with the back of a spoon.
Bake the Meringue:
Finally, bake the pie in a preheated oven at 356 °F (180 °C) for about 10–15 minutes, or until the meringue is lightly browned. Be careful not to let it burn.
Decorate:
Now remove the pie from the oven and let it cool. Before serving, sprinkle lemon zest on top. Lastly, refrigerate the pie for at least 2 hours to set properly. Serve chilled.
