Ingredients:
- 3 large eggs
- 1 1/4 cups of water (10 fl oz) – (300 ml)
- 4 cups of sour tapioca starch (1.1 lbs) – (500 g)
- 2/3 cup of oil or melted butter (5 fl oz) – (150 ml)
- 1 teaspoon of salt
Directions:
First, place the sour tapioca starch and salt in a bowl, mixing well. Set aside.
Next, in a saucepan, combine the water and oil (or butter) and heat until it comes to a boil.
Then, remove from heat and pour the boiling mixture over the tapioca starch, scalding it. Mix well until a smooth dough forms. After that, let the dough cool completely before moving to the next step.
Once cooled, add the eggs to the dough and mix again until fully incorporated.
Shaping and Baking
Finally, shape the biscuits as desired and place them on a glass baking dish lightly greased with oil. Preheat the oven to 356 °F (180 °C) and bake for about 30 minutes, or until slightly golden.
Finishing and Tips
After removing the biscuits from the oven, let them cool slightly before transferring to a serving plate.
Tip: For a healthier version, replace part of the oil with water.
To enhance the flavor, consider adding dried herbs like oregano or rosemary for a more aromatic twist.
