Base:
- 1 cup of milk
- 1 tablespoon of margarine
- 2 cans of canned pineapple (20 oz each)
- 2 cans of sweetened condensed milk (14 oz each)
- 2 cans of heavy cream (about 12 oz each), without the liquid
- 3 tablespoons of cornstarch dissolved in a little water
Topping:
- 6 tablespoons of sugar
- 4 egg whites, beaten to stiff peaks
- 2 cans of heavy cream (about 12 oz each), without the liquid
- Shredded coconut (to taste)
Directions:
Preparing the Base:
First, cut the pineapple into small cubes. In a saucepan, combine the sweetened condensed milk, milk, butter, and cornstarch dissolved in a bit of water.
Next, cook over medium heat, stirring constantly until the mixture thickens and becomes smooth. Let it cool, then add the heavy cream and pineapple.
Preparing the Topping:
Now, beat the egg whites until stiff peaks form, gradually adding the sugar until you get a firm consistency. Add the heavy cream and gently fold it in with a spoon.
Assembly:
Finally, in a large glass dish, spread the pineapple cream. Next, cover with the egg white mixture and sprinkle shredded coconut on top. Refrigerate for at least three hours.
