How to make Blueberry Cake

Blueberry cake perfect for breakfast or afternoon, perfect for all occasions. Remembering that we will start by listing all the ingredients, so start by separating all the ingredients and then the complete preparation method.

Ingredients

  • 3 eggs
  • 1 cup of sugar
  • Butter without salt, softened
  • 1 and a half cups of all-purpose flour plus two tablespoons
  • 1 1/2 cups blueberries, fresh or frozen (if frozen, thaw and drain)
  • Half a cup of Greek yogurt
  • 1 1/2 teaspoons of vanilla powder
  • One teaspoon of lemon zest
  • One teaspoon of baking powder
  • 1/4 teaspoon salt
  • Powdered sugar
  • A cherry on top

Directions

We’ll start by preheating the oven to 350°F and greasing a 9×5-inch loaf pan with butter or non-stick spray.

Then, using a medium bowl, whisk together the baking powder, 1 1/2 cups of flour and the salt. Now set this bowl aside for later.

Then, taking a large bowl or a mixer, beat the sugar and butter until fluffy and lighter in color, which should take about 4 to 5 minutes.

Subsequently, incorporate the eggs individually, ensuring each one is fully blended before introducing the next. Now add the lemon juice and vanilla extract.

After that, we’ll gradually add the flour mixture and the Greek yogurt, always alternating between the dry and wet ingredients, remembering not to overmix.

Then, to prevent the blueberries from sinking to the bottom of your loaf cake, coat them with the remaining flour in a separate bowl and carefully fold them into the batter.

Then pour the batter into the prepared cake tin and place it in the preheated oven. Then bake for about 55 minutes or until a toothpick inserted in the center comes out clean.

Finally, remove the bread from the oven and leave it to cool for 20 to 30 minutes in the tin.

Finally, once cooled, sprinkle the top with icing sugar and serve warm or at room temperature.
