- 2 eggs
- Salt to taste
- 400 grams of all-purpose flour (approximately 3 1/4 cups)
- 2 cups of milk
- 200 grams of grated half-cured Minas cheese (approximately 1 1/2 cups)
- 1 tablespoon of baking powder
- 1 cup of vegetable oil
Filling Ingredients:
- 1 cup of cream cheese
- Parsley and chives
- 1 large onion, finely chopped, to taste
- 1 tablespoon of annatto (achiote) powder
- 500 grams of shredded chicken breast (approximately 1.1 pounds)
- 350 grams of chopped hearts of palm (approximately 12 ounces)
- Garlic and salt to taste
- 1 heaping tablespoon of all-purpose flour
- Vegetable oil for sautéing
Directions:
Preparing the dough:
First, using a blender, combine the oil, milk and eggs, beating well. Then add the wheat flour and blend for about 3 minutes.
Then turn off the blender, add the cheese and yeast and mix gently with a spoon. Set aside.
Preparing the filling:
We’ll start by cooking the chicken and shredding it. Now, in a pan, sauté the garlic and onion with oil.
Then add the shredded chicken, salt and paprika, stirring to combine. Now add a spoonful of wheat flour and about 3 spoonfuls of water to create a slight thickness.
Then add the parsley and spring onions and use this mixture to fill the pie.
Assembly:
Finally, grease a rectangular baking dish with butter and flour.
Distribute half the dough into the dish. Now spread all the filling over this layer.
