- ¼ teaspoon salt
- 1 cup Asiago cheese shredded
- 2 cups spinach fresh
- 3 garlic cloves minced
- 8 oz penne pasta (use gluten-free brown rice penne, for gluten-free version)
- ⅓ cup sun-dried tomatoes with oil 2 tablespoons
- 1 lb chicken breast sliced in half, chopped
- salt
- ¼ teaspoon paprika
- 1 cup half and half and more – (half milk – half cream to form a lighter cream)
Directions
First, cook the pasta according to the instructions on the package, then drain it and rinse it. Now, if the sun-dried tomatoes are too big, cut them into smaller pieces.
Then, using a frying pan, heat 2 tablespoons of olive oil together with the chopped garlic and the chopped sun-dried tomatoes over a medium heat. Then add the chopped chicken breast to the mixture, seasoning generously with salt and paprika. Now cook the chicken thoroughly.
Next, in the same pan, incorporate 1 cup of half-and-half and ¼ teaspoon of salt. Now bring the mixture to the boil, add ½ cup of grated Asiago cheese (half of the total needed) and stir for about 30 seconds until the cheese melts.
Then reduce the heat from a simmer to medium, continuing to stir to ensure that all the cheese melts. Now, if the sauce seems too thin, gradually add the remaining ½ of Asiago cheese over medium heat, stirring constantly. Then, if the sauce thickens too much, add another ⅓ cup of half-and-half and stir.
Finally, taste the sauce and adjust the salt if necessary. Then add the cooked and drained pasta to the sauce, along with the spinach.
To finish, mix everything together, cover with a lid and leave the pasta on a low heat to allow the spinach to wilt. Now, when the spinach has wilted, mix everything together, taste and add more salt if necessary.
