How to make Potato Sticks

Ingredients:
- 3 white potatoes (regular potatoes)
- 1 cup of shredded mozzarella cheese (100 g)
- 1 teaspoon of garlic powder
- 5 tablespoons of potato starch
- Chopped parsley to taste
- Vegetable oil for frying
- Paprika to taste
- Salt to taste
Directions:
First, thoroughly wash the potatoes under running water. Then, peel and cut them into small pieces.
Next, place the potatoes in a pot with water and a pinch of salt. Cook for about 15 minutes, until they are soft but still slightly firm.
After that, drain the water and mash the potatoes using a fork or press them through a fine sieve until you get a smooth, lump-free puree.
Then, transfer the mashed potatoes to a bowl. Add the chopped parsley, shredded mozzarella cheese, garlic powder, paprika, and potato starch. Mix well until the dough becomes firm and homogeneous.
Afterwards, place the dough on a clean, smooth surface. Roll it out with a rolling pin until it’s about 0.4 inches (1 cm) thick. Lastly, cut it into sticks (as shown in the image below, if available).

Next, heat oil in a deep pan or skillet. Fry the sticks in batches, turning them to brown evenly on both sides.
After frying, place them on paper towels to absorb excess oil. Avoid overcrowding the pan to ensure even frying.
Finally, serve the potato sticks while still hot. They go great with grilled meats, fresh salads, and can be served with garlic sauce or seasoned mayonnaise.
