How to make Potato Rolls with Cheese and Chicken

The recipe for cheesy potato rolls stuffed with chicken and mushrooms combines the rich taste of melted cheese, tender potatoes, and savory chicken with mushrooms, all wrapped into a delicious golden roll. Ingredients:

  • 2 large eggs
  • 150 g mushrooms (about 5.3oz / 1 ½ cups, chopped)
  • 4–5 medium potatoes (about 600g / 21oz / 1.3 lb)
  • 3 tablespoons flour (about 24g / 0.85oz)
  • 1 onion (about 100g / 3.5oz)
  • 2 garlic cloves (about 6g / 0.2oz)
  • 2 chicken breasts, or ground chicken (about 400g / 14oz)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (about 2 tablespoons / 8g / 0.3oz)

Directions:

1 — Prepare the potato base:
Peel the potatoes and cook them until very tender. Mash them in a bowl until smooth and creamy. Let them cool slightly, then add the eggs and flour. Mix well until you get a soft, dough-like texture and set aside.

2 — Make the chicken and mushroom filling:
Cut the chicken into small cubes and cook it in a skillet over medium heat until it starts to brown. Add the chopped onion, minced garlic, and finely diced mushrooms. Sauté everything together for about 7–10 minutes, stirring often, until the mixture is cooked and fragrant. Season with salt, pepper, and finish with freshly chopped parsley.

3 — Shape the rolls:
Take a portion of the potato mixture and flatten it slightly on a clean surface or on parchment paper, forming a round disc. Place a bit of the filling on one edge and carefully roll it up until sealed. Repeat the process with the remaining potato mixture and filling.

4 — Bake:
Arrange the rolls on a baking sheet lined with parchment paper. If you like, brush them with melted butter or sprinkle grated cheese on top. Bake in a preheated oven at 375°F (190°C) for about 20–25 minutes, or until golden and slightly crispy.

Preparation Tips:
Before you start, make sure all ingredients are ready to use. Finely chop the chicken and mushrooms, grate the cheese, and cook the potatoes until tender—this will make the entire process smoother and faster.
