Ingredients:

  • 2 lbs russet potatoes, peeled and diced
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced cooked ham
  • 1 cup shredded cheddar cheese
  • 1/2 cup whole milk
  • 2 large eggs
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional)

Instructions:

Preheat your oven to 375°F (190°C). Grease a 9-inch deep-dish pie pan with butter or cooking spray.

In a large pot, bring water to a boil and add the diced potatoes. Cook until tender, about 10-15 minutes. Drain the potatoes and mash them with a potato masher or fork. Season with salt and pepper to taste.

In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent and fragrant.

Stir in the diced cooked ham and cook for an additional 2-3 minutes until the ham is heated through.

In a separate bowl, whisk together the whole milk and eggs until well combined.

In the greased pie pan, spread half of the mashed potatoes to form the bottom crust.

Cover the pie with aluminum foil and bake in the preheated oven for 25 minutes.

Remove the foil and continue baking for an additional 15-20 minutes or until the top is golden brown and the pie is set.
