How to make Pancakes in 10 Minutes

Ingredients:
- 2 Eggs
- 2 tablespoons of Sugar
- 1 cup of Plain Yogurt (250 ml)
- 1 ¾ cups of Chickpea Flour (250 g)
- 1 teaspoon of Baking Soda
- A pinch of Salt
- Apples (or another fruit of your choice for the filling)
- Butter: for frying
Directions:
Basic Batter:
First, crack the 2 eggs into a large mixing bowl. Then, add the sugar, salt, and a touch of enthusiasm. Next, stir in the plain yogurt and mix until the sugar is fully dissolved. After that, add the baking soda and mix again until well combined.
Chickpea Flour:
Then, gradually add the chickpea flour, stirring continuously to form a smooth, consistent batter.
Apple Filling:
After that, peel the apples and cut them into small cubes. Next, melt the butter in a skillet and add the apple cubes, sprinkling sugar on top. Cook over low heat until the apples are tender and slightly caramelized.
Time to Fry:
Next, transfer the batter into a piping bag (or use a clean plastic bag and snip off the tip). Lightly grease and heat a skillet. Carefully pipe out small rounds of batter. On top of each, spoon a bit of the apple filling and then cover with a little more batter. Finally, fry both sides until golden brown, being careful not to burn.
