Ingredients:
- 1 cup rolled oats (about 90 g)
- 2 lemons, preferably Sicilian (zest only)
- 200 g plain yogurt (unsweetened)
- 2 tablespoons melted butter (about 28 g)
- Stevia sweetener to taste (or another natural sweetener of your choice)
Directions:
First, grind the oats in a blender or food processor until they turn into flour. It doesn’t need to be too fine — leaving a few larger flakes will add some texture.
Next, transfer the oat flour to a bowl, add the lemon zest, and mix in the other ingredients. Then, stir well until you get a smooth dough.
After that, let the dough rest for about 15 minutes, so the oats can fully absorb the liquids.
Meanwhile, grease a glass baking dish with a little butter, or line it with parchment paper.
Then, shape the dough into small discs with your hands and place them on the prepared dish.
Afterwards, brush the tops with a bit of yogurt and bake in a preheated oven at 347 °F (175 °C) for about 30 minutes, or until lightly golden.
Finally, remove the cookies from the oven and let them cool.
