Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips or chopped chocolate
Instructions:
In a medium saucepan, whisk together the heavy cream, whole milk, granulated sugar, and unsweetened cocoa powder.
Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly to dissolve the sugar and cocoa powder. Remove from heat once it starts simmering.
In a separate mixing bowl, whisk the egg yolks until smooth.
Slowly pour about 1/2 cup of the hot cream mixture into the egg yolks, whisking continuously to temper the eggs and prevent them from curdling.
Gradually pour the egg yolk mixture back into the saucepan with the remaining cream mixture, stirring constantly.
Place the saucepan back on the stove over low heat. Cook the mixture, stirring constantly, until it thickens and coats the back of a spoon. This should take about 5-7 minutes.
Remove the saucepan from the heat and stir in the vanilla extract.
Pour the hot chocolate custard through a fine-mesh sieve into a clean bowl to remove any lumps or curdled bits.
Let the custard cool at room temperature for a while, then cover it with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Refrigerate the custard until it’s completely chilled, preferably overnight.
Once the custard is thoroughly chilled, pour it into an ice cream maker.
Churn the ice cream according to the manufacturer’s instructions for your ice cream maker. This typically takes around 20-25 minutes until the ice cream is thick and creamy.
During the last few minutes of churning, add the semi-sweet chocolate chips or chopped chocolate to the ice cream.
Transfer the churned ice cream into an airtight container.
Cover the container with a lid and freeze the ice cream for an additional 2-4 hours, or until it reaches your desired firmness.
