Ingredients:
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried sage
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper (adjust to taste)
- 8 ounces egg noodles (or your favorite pasta)
- 2 cups cooked chicken, shredded or diced
- 1/4 cup fresh parsley, chopped
Instructions:
In a large pot or Dutch oven, heat the vegetable oil over medium heat.
Add the chopped onion, sliced carrots, and sliced celery to the pot. Sauté the vegetables for about 5 minutes, or until they start to soften.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Pour the chicken broth into the pot, and add the bay leaf, dried thyme, dried rosemary, dried sage, salt, and black pepper.
Bring the broth to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 15-20 minutes, allowing the flavors to meld.
While the soup is simmering, cook the egg noodles (or your choice of pasta) separately according to the package instructions. Drain and set aside.
After the soup has simmered, remove the bay leaf.
Stir in the cooked chicken and cooked egg noodles (or pasta). Let the soup heat through for a few minutes.
Taste the soup and adjust the seasoning with salt and pepper if needed.
Before serving, sprinkle chopped fresh parsley over the top of the soup for added freshness and color.
