How to make Cheesy Mashed Potato Cakes

- 2 eggs
- 1 cup shredded cheddar cheese (about 4 oz or 115 g)
- ¼ cup chopped chives (about 15 g)
- 3 cups mashed potatoes, cold or at room temperature (about 700–750 g)
- Salt and pepper to taste
Directions:
First, preheat your oven to 392 °F (200 °C). Lightly grease a standard muffin tin using butter, cooking spray, or a little oil to keep the puffs from sticking.
Then, in a large mixing bowl, combine the mashed potatoes, shredded cheese, eggs, chopped chives, and a pinch of salt and pepper. Stir well until everything is fully blended.
After that, fill each muffin cup with the mixture, making sure to fill them up to the top for a nice, full shape.
Next, place the muffin tin in the oven and bake for about 25 to 30 minutes, or until the tops turn a beautiful golden brown and the edges become slightly crispy.
