Buttery Pecan Snowball Cookies, also known as Mexican Wedding Cookies or Russian Tea Cakes, are delightful and bite-sized treats that melt in your mouth. Ingredients – Servings 36
- 2tsp. Vanilla extract.
- Pinch of salt
- 2 ¼ C. All-purpose flour.
- 2 Sticks of butter softened
- ½+ 1 C. Powdered sugar divided
- 1C. Finely chopped pecans.
Directions:
First, preheat the oven to 350 degrees Fahrenheit. Then, using a bowl, mix the butter, ½ cup of powdered sugar, vanilla extract, a pinch of salt and flour. Then stir, mixing well until the dough is smooth.
Then we will gently incorporate the chopped walnuts into the dough mixture, lightly moisten your hands and shape the dough into 36 balls of equal size.
Then, place the dough balls on a baking tray lined with baking paper and bake for about 12 minutes.
Then we will let the cookies cool completely.
Finally, let’s put a cup of powdered sugar in a shallow bowl. Finish by rolling each cookie in powdered sugar until coated and serve.
