- 2 ¾ cups sifted cake flour
- 2 ½ teaspoons baking powder
- 2 cups white sugar
- 1 cup butter, softened
- 1 (3 ounce) package strawberry flavored Jell-O®
- 4 large eggs (room temperature)
- 1 cup whole milk, room temperature
- ½ cup strawberry puree made from frozen sweetened strawberries
- 1 tablespoon vanilla extract
Directions
First, heat the oven to a temperature of 350 degrees Fahrenheit (175 degrees Celsius). Let’s take two 9-inch round cake pans and grease and flour them.
Then, using a large bowl, use an electric mixer to beat the butter, sugar and dried strawberry gelatine until the mixture is light and fluffy. Now add the eggs, one at a time, making sure to beat well after each addition.
Next, in another large bowl, mix together the flour and baking powder. Then gradually mix this dry mixture into the butter mixture, alternating with the milk. Now let’s incorporate the vanilla into the dough and the strawberry purée.
Then divide the batter evenly between the prepared cake tins.
Then place the tins in the preheated oven and bake for approximately 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
Finally, leave the cakes to cool in the tins on a wire rack for 10 minutes. Then gently run a table knife around the edges to loosen the cakes.
Finally, we will carefully invert the cakes onto a serving plate or cooling rack to let them cool completely.
