For the Ribs:
- 2 racks of baby back ribs (about 4-5 pounds total)
- 2 tablespoons brown sugar
- 1 tablespoon paprika

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (adjust to taste)
- BBQ sauce for basting and serving
For the Red Sauce:
- 1 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 2 tablespoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
Instructions:
For the Ribs:
Preheat your grill to medium heat (around 300°F to 325°F / 150°C to 165°C).
In a bowl, combine the brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper to create a dry rub.
Remove the membrane from the back of the ribs for better flavor penetration. Pat the ribs dry with paper towels.
Rub the dry rub mixture over both sides of the ribs, ensuring they are evenly coated.
Place the ribs on the grill over indirect heat. Close the lid and cook for about 2.5 to 3 hours, or until the ribs are tender and the meat starts pulling away from the bones.
During the last 20-30 minutes of cooking, baste the ribs with your favorite BBQ sauce on both sides. Allow the sauce to caramelize.
