Meal Prep: Ultra-Creamy Mashed Potatoes
This super smooth mashed potato recipe is incredibly creamy and rich. The combination of creamy cheese and mayonnaise creates a silky texture that makes it one of the best homemade mashed potato recipes for lunch or dinner.
Ingredients:
- 2.2 lb potatoes, peeled (1 kg)
- 4 cups water (1 liter / 34 fl oz)
- ⅔ cup creamy cheese spread (160 g / 5.6 oz)
- ⅔ cup mayonnaise (160 g / 5.6 oz)
- 1 teaspoon salt (5 g / 0.17 oz)
Instructions:
Cook the cubed potatoes in water until very soft (about 15–20 minutes). Drain the potatoes and beat or mash until smooth.
Add the salt, mayonnaise, and creamy cheese spread. Mix well for about 1 minute until creamy.
For a smoother texture, pass the mash through a sieve. Serve warm.
