Meal Prep: Easy Passion Fruit Cake
A soft and flavorful passion fruit cake that is perfect for breakfast, brunch, or an afternoon snack. The tropical flavor combined with a creamy topping makes this cake simple but incredibly delicious.
Ingredients:
Cake
- 1 ¾ cups all-purpose flour (about 220 g / 7.8 oz)
- 1 ¼ cups sugar (about 250 g / 8.8 oz)
- ¾ cup concentrated passion fruit juice (180 ml / 6 fl oz)
- ⅓ cup vegetable oil (80 ml / 2.7 fl oz)
- 3 large eggs
- 1 tablespoon baking powder (12 g / 0.4 oz)
Passion Fruit Topping
- ⅓ cup passion fruit pulp with seeds (80 ml / 2.7 fl oz)
- 1 can sweetened condensed milk (395 g / 14 oz)
Instructions:
1. Prepare the Batter
- In a blender, combine the eggs, oil, sugar, and passion fruit juice.
- Blend for about 1 minute until smooth and creamy.
- Transfer the mixture to a bowl and gradually add the flour, mixing well until smooth.
- Gently fold in the baking powder.
2. Bake
- Pour the batter into a greased baking pan.
- Bake in a preheated oven at 350°F (180°C) for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool slightly before removing from the pan.
3. Make the Topping
- In a blender, combine the condensed milk and passion fruit pulp.
- Blend for about 1 minute until a smooth cream forms.
- Pour the topping over the warm cake and spread evenly.
Tips:
✔ For a stronger flavor, add 1–2 tablespoons of passion fruit pulp directly to the batter.
✔ If you like a thicker topping, refrigerate the cream for 10 minutes before spreading.
✔ This cake tastes even better after chilling for a couple of hours, allowing the topping to soak slightly into the cake.
