Meal Prep: Homemade Soft Rolls
This easy homemade sweet bread recipe makes large, bakery-style fluffy rolls with a soft texture and lightly sweet flavor — perfect for breakfast, coffee time, or selling homemade baked goods.
Ingredients:
Dough
- 1 can (14 oz / 397 g) sweetened condensed milk
- 2 eggs
- 2/3 cup vegetable oil (5.3 fl oz)
- 1 1/3 cups warm water (10.6 fl oz)
- 1 pinch of salt
- 2 tbsp active dry yeast (about 20 g)
- About 2.2 lb all-purpose flour (≈ 8 to 9 cups), added gradually
Simple Sugar Glaze
- 6 tbsp sugar
- 12 tbsp water (¾ cup / 6 fl oz)
Optional topping: extra condensed milk and shredded coconut.
Instructions:
Start by combining the condensed milk, eggs, oil, warm water, salt, and yeast in a large mixing bowl. Stir well until fully blended and slightly creamy.
Begin adding the flour slowly while mixing. Keep incorporating flour until the dough becomes soft, elastic, and no longer sticks heavily to your hands.
Transfer the dough to a lightly floured surface and knead for about 8–10 minutes, developing a smooth and stretchy texture.
Place the dough in a greased bowl, cover, and allow it to rest in a warm spot until it doubles in size (about 60–90 minutes).
Once risen, divide the dough and roll portions into long ropes. Shape them into rings or braided roscas and arrange on a greased baking pan, leaving space between each piece for expansion.
Cover again and let them rise a second time until noticeably puffed.
Bake in a preheated oven at 350°F (180°C) for approximately 25–30 minutes, or until golden brown. For deeper color and flavor, allow them to bake slightly longer.
Finishing Touch:
While baking, simmer sugar and water over medium heat until lightly thickened. Brush the warm glaze over the bread immediately after removing from the oven to create shine and softness.
For an extra indulgent version, drizzle condensed milk and sprinkle shredded coconut on top.
Yield
✅ Makes 10 to 12 large sweet bread rings
(or about 20 medium bakery-style rolls)
Serves approximately 12–15 people.
Pro Tips
- Warm (not hot) water activates yeast faster and guarantees fluffy dough.
- Brushing glaze while the bread is hot locks in moisture.
- These freeze extremely well — perfect for meal prep or home bakery sales.
