This no-bake coconut pudding is ultra creamy, rich, and perfect when you want an easy dessert without turning on the oven. Made with sweetened condensed milk, coconut milk, and shredded coconut, this chilled flan-style dessert is smooth, tropical, and ideal for holidays or family gatherings.
Ingredients:
- 2 cups whole milk (16 fl oz)
- 7 oz heavy cream
- 1 can (14 oz) sweetened condensed milk
- 3.5 oz sweetened shredded coconut
- 1 bottle (6.7 fl oz) coconut milk
- 2 packets unflavored gelatin (0.42 oz total / 12 g)
- 12 tablespoons warm water (¾ cup / 6 fl oz)
Instructions
In a blender, combine the whole milk, heavy cream, sweetened condensed milk, and coconut milk. Blend for about 2 minutes, until smooth and creamy. Set aside.
In a small bowl, dissolve the unflavored gelatin in warm water. Stir well until completely dissolved.
Pour the dissolved gelatin into the blender mixture and blend again for 1 minute to fully incorporate. Lightly grease a pudding mold.
Pour the mixture into the prepared mold and refrigerate for 2 to 3 hours, or until completely firm.
Once firm, carefully loosen the sides and unmold onto a serving plate.
Garnish with a drizzle of sweetened condensed milk and shredded coconut (optional), slice, and serve chilled.
