- 4 cups shredded chicken (about 560 g / 19.8 oz)
- 2 cups mashed potatoes (about 420 g / 14.8 oz)
- 2 large eggs (about 100 g / 3.5 oz total)
- Oil for frying (about 500 ml / 17 fl oz, depending on pan size)
Instructions
In a large bowl, combine the shredded chicken and mashed potatoes. Mix well until fully incorporated and smooth.
Form the mixture into small cylinders or oval shapes, about 2 to 3 inches (5 to 7 cm) long.
Beat the eggs in a separate bowl and dip each croquette into the beaten eggs, coating completely.
Heat the oil to about 350°F (180°C).
Fry the croquettes in batches for 3–5 minutes, or until they are golden brown and crispy on the outside.
Remove and place on paper towels to drain excess oil.
