Recipe ingredients:

  • 1 zucchini, grated
  • 1 carrot, grated
  • 1 potato, grated
  • 4 tablespoons oat flour
  • 100g shredded cheese (about 3.5 oz)
  • 2 eggs
  • Salt and seasonings to taste 

Instructions:

Grate the zucchini, carrot, and potato. Let them drain well to remove excess water. You can squeeze them with a clean towel to make sure they’re as dry as possible.

In a large bowl, mix the veggies with the eggs, oat flour, cheese, salt, and your favorite seasonings. Mix until the dough is firm enough to shape with your hands.

Form small patties or balls with the mixture.

Cook them in the oven, air fryer, or even fry them in a pan, depending on your preference, until golden and crispy.

Serve them hot and enjoy this delicious and healthy snack!

Recipe ingredients: 1 cup (120g / 4.2 oz) of all-purpose flour/wheat flour 1 egg 1 tablespoon (14g / 0.5 oz) of butter ½ cup (120ml / 4 oz) of milk Salt to taste 1 teaspoon (5g / 0.18 oz) of baking powder Filling Suggestions (to taste): Shredded chicken Cream cheese or soft requeijão Sliced cheese (You may also use ham, vegetables, or your favorite ingredients) Instructions: Prepare the batter: In a bowl, mix the egg, milk, and melted butter until well blended. Then add the flour, baking powder, and salt. Stir until you have a smooth, thick batter. Grease a non-stick skillet, then pour in half the batter and spread it evenly with a spatula. Add the filling: Place your preferred fillings (like shredded chicken, cream cheese, and sliced cheese) on top of the batter. Then cover with the remaining batter, spreading it to seal the filling. Cover the skillet with a lid and cook on low heat for 6 to 7 minutes, or until golden brown on the bottom. Carefully flip the sandwich and cook the other side until golden and cooked through.
