Ingredients:
- 1 egg
- 2 ripe bananas
- 1/2 cup sugar (4 oz / 120g)
- 1/4 cup vegetable oil (60ml)
- 1/4 cup plant-based milk (60ml)
- 1 cup cornstarch (Maizena or similar) (4.4 oz / 125g)
- 1 tablespoon baking powder (0.5 oz / 15g)
- Ground cloves or cinnamon (optional)
Directions:
First, break the egg and separate the egg white from the yolk. In a bowl, beat the egg white until it’s nice and fluffy (you can use a fork to beat it).
Next, in a bowl, mash the two bananas with a fork until they are well mashed, but not necessarily completely smooth; leaving some small chunks is fine.
Then, in another bowl, place the egg yolk, oil, and plant-based milk. Mix well.
After that, add the sugar, cornstarch, and mashed bananas. Stir everything together until you form a smooth batter.
Now, add the baking powder and stir gently. If you’d like, you can add cinnamon or ground cloves at this point.
Carefully fold the beaten egg white into the batter. Stir slowly to maintain the lightness of the mixture.
Finally, pour the batter into a greased glass baking dish and place it in the preheated oven at 356 °F (180 °C) for about 30 to 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
Let the cake cool a bit before removing it from the pan. Finally, cut it and serve.
The banana cake will be super fluffy, with the perfect texture to enjoy with coffee!
