How to make Marbled Carrot Cake
Marbled Carrot Cake is an easy way to switch things up—combining light carrot flavor with rich chocolate. It’s soft, pretty, and always a crowd-pleaser. Ingredients:
- 4 eggs
- 3 medium carrots, peeled and chopped
- 2 tablespoons unsalted butter (28g)
- 5 tablespoons water (75 ml)
- 1 tablespoon honey or corn syrup
- 2 tablespoons unsalted butter (28g)
- 1 tablespoon baking powder
- 1½ cups granulated sugar
- 2 cups all-purpose flour
- ½ cup cocoa powder (50% cocoa)
- 100 g semisweet chocolate, chopped (approx. 3.5 oz)
- 1/3 cup vegetable oil (approx. 80 ml)
- 2 pinches of salt
Directions:
First, peel and cut the carrots into pieces. Place them in a blender along with the eggs, oil, melted butter, and sugar. Blend well until the mixture is completely smooth. Transfer the mixture to a bowl and set it aside.
Then, in a separate container, combine the cocoa powder (50% cocoa) with water and stir well until fully dissolved. Set this chocolate mixture aside.
Next, add the all-purpose flour and salt to the bowl with the carrot mixture. Mix well to incorporate. After that, gently fold in the baking powder until just combined.
Now, divide the batter into two equal parts, placing each in a separate bowl. In one of the bowls, add the chocolate mixture and stir until it becomes a smooth chocolate batter.
In a greased and floured glass bundt pan, pour a layer of chocolate batter. After that, add a layer of the carrot batter. Then, add more chocolate batter. Next, another layer of carrot batter. Finally, top it off with the remaining chocolate batter.
Place it in a preheated oven at 356 °F (180 °C) and bake for about 45 minutes, or until a toothpick inserted into the center comes out clean.
While the cake is baking, prepare the topping: in a saucepan over high heat, add the butter and honey. Stir until the butter is completely melted. Lastly, remove from heat, add the chopped chocolate, and stir well until fully melted and smooth.
To finish, pour the chocolate topping over the cooled cake and enjoy this unique and delicious marbled carrot cake!
