- 1 cup whole milk
- 2 tablespoons Chile hot sauce (such as Cholula)
- 2 pounds large peeled, deveined raw shrimp
- 1/2 teaspoon cayenne pepper
- For serving: lemon wedges, cocktail sauce, rémoulade (optional)
Directions
First, start by pouring oil into a large, deep-frying pan, making sure it reaches a depth of 2 inches, and then heat it over medium-high heat until it reaches 370 °F.
Then, while the oil is heating, in a shallow dish, whisk together the eggs, milk and hot sauce. Add the prawns to this mixture and mix well. Now in a separate shallow dish, mix together the cornflour, flour, salt, black pepper and cayenne pepper.
Next, we’ll remove 6 to 8 prawns from the egg mixture, letting the excess drip off, and coat them with the flour mixture. Now place these coated prawns in the hot oil and fry them until the coating is golden and crispy, which should take about 2 minutes.
Then use a slotted spoon to remove the fried prawns and place them on a baking tray lined with absorbent paper.
We will then repeat this process with the remaining prawns, making sure to bring the oil back up to 370 °F over medium-high heat before placing each batch of prawns in.
