Ingredients – Servings 10
- 114oz can, peeled and diced tomatoes with juice
- 106 inches soft corn tortillas
- 1cupof your favorite salsa
- ½cupshredded Colby cheese
- 1pound lean ground beef
- 11 oz package taco seasoning mix
- We recommend Ole El Paso or Taco Bell’s flavorful seasoning
- Mexican or taco-style cheese works great too
Directions
First Preheat the oven to 350 degrees F.
Then, using a deep cast iron skillet over medium-high heat, brown the ground beef. Remember to make sure to break it into small pieces as it cooks and stir frequently. Now let’s remove the excess fat before adding other ingredients.
Then, after the ground beef is cooked, add the taco seasoning and tomatoes.
Then, line a 9×13 inch baking dish with half of your tortillas.
Spoon the ground beef mixture into the tortillas.
Then, cover with the remaining tortillas and spread the sauce over the top of the tortillas and sprinkle with the cheese.
Finally, we will bake at 350 degrees F for approximately 20 – 30 minutes or until the cheese melts and bubbles, it is ready, remove from the oven, serve.
