Ingredients:
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 cups whole milk
- 1/4 cup white vinegar
- 2 1/2 cups flour
- 3/4 cup sugar

- 3 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon butter, softened, or as needed, for greasing, plus more for serving

Directions:
First preheat a frying pan to 175 degrees C (300 degrees F).
After that, mix the milk and vinegar in a small bowl or 4-cup liquid measuring cup.
Then whisk together the flour, sugar, baking powder, baking soda and salt in a second bowl.
Then beat the eggs in a large bowl until smooth. Then add the vanilla and milk mixture and beat well. Then add the flour mixture to the bowl with the egg mixture and whisk until well combined. (The dough will be lumpy.) Now let it rest for 3 minutes and stir again carefully.
After that, melt a little butter in the frying pan and then carefully wipe it out with a paper towel. (You just want a little shine; don’t grease the pan too much.) Pour the batter in 1/3 cup portions into the pan. Then cook until bubbles form on the surface of the batter, about 2 and a half minutes.
Then turn the pancakes over and cook until golden brown on the other side, about 1 1/2 minutes more. Then repeat the process with the rest of the batter. Finally, serve immediately with butter and toppings.
