Ingredients
- 4 cups chopped fresh tomatoes
- 2 cups chicken broth
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 4 cloves garlic
- 1 large slice of onion
- 2 teaspoons white sugar, or to taste
- 1 teaspoon salt, or to taste
Directions
First, combine the tomatoes, chicken stock, garlic cloves and a large slice of onion in a saucepan over a medium heat. Then bring to the boil and simmer for about 20 minutes to blend the flavors.
Then remove from the heat and pass the mixture through a food mill into a large bowl or saucepan. Then discard what’s left in the food mill.
Next, melt the butter over medium heat in the now empty saucepan. Then add the flour to make a roux and cook, stirring constantly, until the mixture is medium brown.
Then slowly pour in a little of the tomato mixture to prevent lumps from forming, then add the rest.
Finally, season with sugar and salt to taste. Then serve hot and enjoy!
