Ingredients:
- 4 eggs
- 1 cup of sugar (use a full cup or less, depending on your preference)
- 1 cup of cornstarch
- 1 cup of sweet tapioca starch
- Oil for greasing the pan
Directions:
First, beat the eggs with the sugar in a mixer for about 4 minutes, until the mixture becomes light and airy. This step is essential to give the cake its fluffiness since it doesn’t use baking powder.
Next, remove the bowl from the mixer and gradually add the cornstarch, gently mixing with a whisk to keep the batter light. Then, add the sweet starch and continue stirring until the batter becomes smooth.
After that, pour the batter into a baking pan greased with oil. If using a rectangular pan, the ideal size is 9×13 inches (23×32 cm). If you prefer a tube pan, choose one that is 8 or 9 inches (21–22 cm) in diameter. Then bake in a preheated oven at 356 ºF (180 ºC) for about 40 minutes. Finally, increase the temperature to 392 ºF (200 ºC) during the last few minutes to lightly brown the top.
Lastly, let the cake cool slightly before removing it from the pan. To finish, you’ll have a soft, delicate cake that’s perfect with coffee or tea.
