Ingredients:
- 2 large eggs
- ½ cup milk (120 ml / 4 fl oz)
- 2 apples, peeled and diced (~250 g total / 8.8 oz)
- ½ cup granulated sugar (100 g / 3.5 oz)
- ½ cup neutral oil (120 ml / 4 fl oz – sunflower or canola)
- 1 packet baking powder (16 g / ~1 Tbsp / 0.56 oz)
- 2 ½ cups all-purpose flour (300 g / 10.6 oz)
- 1 tsp lemon or orange flavoring or zest of 1 citrus (≈ 2 g / 0.07 oz)
- Powdered sugar for dusting (optional)
Directions:
First of all, preheat the oven to 356 °F (180 °C).
We’ll start by greasing a 9-inch glass baking dish (or lining it with parchment paper for easier removal).
First, in a large bowl, beat the eggs and sugar until the mixture becomes light and slightly foamy.
Then, add the oil, milk, and citrus flavoring, stirring well until fully blended.
Next, gradually add the flour and baking powder, mixing only until a smooth batter forms. Avoid overmixing to keep it light.
After that, gently fold in the diced apples, making sure they are evenly spread throughout the batter.
Then, pour the mixture into the prepared dish and smooth out the surface.
Right after, bake for about 30 to 35 minutes, until the top is golden, and a toothpick inserted in the center comes out clean.
Finally, remove from the oven and let it cool in the dish for about 10 minutes.
At last, transfer the cake to a wire rack and allow it to cool completely.
To finish, dust with powdered sugar if you’d like a classic touch.
