Ingredients:
Cake Batter:
- 4 eggs (about 2 oz / 57g each)
- 1 1/2 cups sugar (8.7 oz / 247g)
- 2 cups all-purpose flour (9.9 oz / 280g)
- 1 tablespoon baking powder (0.42 oz / 12g)
- 5 tablespoons butter or margarine (4.2 oz / 120g)
- 1 cup orange juice (8 fl oz / 240ml)
Syrup Ingredients:
- 1/2 cup orange juice (4 fl oz / 120ml)
- 1 cup granulated sugar (2.8 oz / 80g)
Directions:
Preparing the Batter:
First, in a bowl, mix 1 1/2 cups of sugar with 5 tablespoons of butter at room temperature until you get a moist crumbly texture. Then, add 4 egg yolks and beat until the mixture becomes creamy and lighter in color.
Next, add 1 cup of all-purpose flour and 1/2 cup of orange juice, stirring well until the flour is fully incorporated. After that, add another 1 cup of flour and the remaining orange juice, mixing until you achieve a smooth batter.
Right after, beat the 4 egg whites until stiff peaks form, then gently fold them into the batter to maintain a light texture. Lastly, add 1 tablespoon of baking powder and mix gently.
To finish this step, pour the batter into a greased (12x8x1.8 inches) baking pan and bake in a preheated oven at 356 °F (180 °C) for about 35 to 40 minutes.
After baking, let it cool slightly. Meanwhile, start preparing the syrup.
Preparing the Syrup and Final Touch:
First, in a bowl, mix 1 cup of granulated sugar with 1/2 cup of orange juice. Stir well until the sugar is fully dissolved.
Then, poke small holes on the cake’s surface using a toothpick and pour the syrup over it while it is still warm.
Next, let the cake rest for about 30 minutes so that a light sugar crust can form.
