Ingredients:
- 3 eggs
- 1 cup of all-purpose flour
- 1 cup of cornstarch
- 1 cup of milk
- ¾ cup of oil
- 1 small can of corn (drained)
- 1 tablespoon of baking powder
- Shredded cooked chicken to taste
- Dried seasonings to taste
- Tomato, hearts of palm, and olives to taste
- Fresh parsley (cheiro-verde) to taste
- Grated Parmesan cheese to taste
- Salt to taste
Directions:
First, place the drained corn in a blender along with the milk and blend until smooth. Then, add the eggs and oil, blending again until fully combined.
Next, in a bowl, sift the all-purpose flour, cornstarch, and baking powder. After that, pour in the blended mixture and mix well using a whisk until everything is incorporated.
Afterward, add the salt, dried seasoning, grated Parmesan cheese, cooked and shredded chicken, chopped tomato, hearts of palm, olives, and chopped parsley. Mix thoroughly to evenly distribute all ingredients.
Then, pour the batter into a 9-inch (22 cm) round baking pan that has been greased and floured. Sprinkle some chopped tomato, parsley, olives, and grated Parmesan cheese on top.
Finally, bake in a preheated oven at 356 °F (180 °C) for about 40 to 45 minutes, or until golden and firm. Once done, remove from the oven and serve this delicious savory corn cake.
Tips and Variations:
- For a richer flavor, try adding bacon or smoked sausage to the batter.
- Experiment with different types of cheese for variety.
- To make a healthier version, replace the all-purpose flour with whole wheat flour and swap the oil for olive oil.
