How to make Perfect Homemade Cake

Ingredients:
- 3 eggs
- 2/3 cup milk (150ml)
- 1/3 cup vegetable oil (100ml)
- 1/2 cup + 1 tablespoon granulated sugar (120g)
- 1 teaspoon baking powder
- A pinch of salt
- 1/2 teaspoon vanilla extract or vanilla sugar
- 8 heaping tablespoons all-purpose flour (approx. 3/4 cup or 120g)
For the filling:
- 1 cup ricotta cheese or firm cottage cheese (250g)
- 1 egg
- 2 tablespoons powdered sugar
- 3.5 oz blueberries (100g), fresh or frozen — or another berry of your choice
- 1/3 teaspoon vanilla extract or vanilla sugar
- 2 tablespoons plain yogurt
Directions:
First, in a mixing bowl, beat the eggs with the sugar, salt, and vanilla extract for about 2 to 3 minutes, until the mixture becomes pale and foamy.
Next, add the milk and oil, and stir again until everything is well combined.
Then, gradually add the flour and baking powder, mixing gently to avoid lumps in the batter.
For the filling, start by pressing the ricotta through a fine sieve until it becomes smooth.
After that, add the powdered sugar, vanilla extract, egg, and plain yogurt. Stir until you get a creamy and uniform mixture.
Afterward, pour the batter into a greased glass baking dish, approximately 10 inches (26 cm) in diameter.
Then, gently spread the ricotta filling over the batter in the dish, and lastly, finish by topping with blueberries or your choice of red berries.
Finally, place it in a preheated oven at 338 °F (170 °C) and bake for about 35 to 40 minutes, or until the cake is golden on top and feels firm to the touch.
