How to make Fluffy Carrot Cake

For the Cake:
- 2½ cups (10.6 oz / 300g) all-purpose flour/wheat flour
- 3 to 4 medium carrots, grated (about 10 oz / 280g)
- ½ cup (4 fl oz / 120ml) vegetable oil
- 4 eggs
- 2 cups (14 oz / 400g) sugar
- 1 tablespoon baking powder
For the Chocolate Frosting:
- 3 tablespoons cocoa powder
- 1 tablespoon butter
- 1 cup (7 oz / 200g) sugar
- 1 cup (8 fl oz / 240ml) milk
Directions:
In a blender or food processor, combine the grated carrots, eggs, and oil. Blend until smooth.
Add the sugar and blend again for about 5 minutes, until the mixture is creamy.
Pour the carrot mixture into a mixing bowl or stand mixer. Gradually add the flour and mix until well incorporated.
Gently fold in the baking powder with a spoon or spatula, mix again. Pour the batter into a greased and floured baking pan.
Bake in a preheated oven at 350°F (180°C) for about 40 minutes, or until a toothpick inserted in the center comes out clean.
Make the Chocolate Frosting:
In a small saucepan, add the butter, cocoa powder, sugar, and milk.
Stir well and cook over medium heat, constantly stirring until the mixture thickens into a creamy consistency (about 8–10 minutes).
Once the cake is baked and slightly cooled, pour the hot chocolate frosting over the top.
Let it sit and cool at room temperature for 40–50 minutes to set the glaze and you can serve the carrot cake with chocolate.
