- 8 egg whites
- 8 tablespoons of sugar (about 100 g)
- 8 egg yolks
- 8 tablespoons of sifted all-purpose flour (about 64 g)
- ⅓ teaspoon of vanilla extract (or essence)
- 3 tablespoons of lemon juice (optional) (45 ml)
Directions:
First, start by beating the egg whites in a stand mixer until they form a light foam at the bottom of the bowl.
Then, gradually add the sugar while continuing to beat.
If desired, you may add a few drops of lemon juice to help increase the volume of the egg whites.
Next, add the egg yolks one at a time, beating well after each addition.
After that, make sure each yolk is fully incorporated before adding the next one.
Right after, add the vanilla extract and beat again to evenly distribute the flavor.
Following this, sift the flour and gradually fold it into the batter.
Mix gently using upward folding motions to maintain the airiness of the egg whites and keep the batter light.
Then, pour the batter into a glass baking dish that has been greased and lined with parchment paper.
Place it in a preheated oven at 356 °F (180 °C) and bake for about 35 to 40 minutes, or until golden and firm to the touch.
Lastly, let the cake cool completely in the glass baking dish before removing it.
