Ingredients:
- 4 large eggs
- 1/2 cup cocoa powder
- 1 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup cherry preserves
- 1/2 teaspoon salt
- 1 cup dark chocolate chips
- 1 cup fresh cherries, pitted and halved
Directions:
Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch pan and line it with parchment so the brownies lift out easily.
In a large saucepan, melt the butter over medium heat. Once melted, remove from the stove and whisk in both the granulated and brown sugar until the mixture is smooth.
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
In a separate bowl, combine the flour, cocoa powder, salt, and baking powder. Add the dry mixture to the butter mixture in batches, mixing just until everything is incorporated.
Fold the dark chocolate chips and fresh cherries into the batter.
Spread half of the batter into the prepared pan. Dollop the cherry preserves over the top and gently spread them out. Add the remaining batter and smooth the surface.
Bake for 35–40 minutes, or until a toothpick inserted in the middle comes out clean. Let the brownies cool completely in the pan before slicing.
Before serving, drizzle a little extra cherry preserves on top and garnish with fresh cherries if you like.
FAQs
Can I use frozen cherries?
Yes—just thaw them first and blot off excess moisture so the batter doesn’t get watery.
Can I skip the chocolate chips?
Sure! The brownies will still be rich and fudgy without them.
How do I get cleaner slices?
Refrigerate the brownies before cutting and use a warm knife for neat edges.
Can I double the recipe?
Yes. Use a 9×13-inch pan and add a few more minutes to the baking time.
